Using the Moffat E35D6-26/P85M12 Turbofan convection oven and proofer, operators can conveniently cook product before holding it at warm, appetizing temperatures until it is served. The oven accommodates six half-size sheet pans and uses a two-speed fan to effectively cook foods of different sizes and consistencies. Its interior is porcelain enameled, creating a nonstick surface to simplify the cleanup process.

The Moffat E35D6-26/P85M12 proofer and convection oven is mounted on 4-inch casters, enabling operators to comfortably wheel it between locations for service or cleaning. The interiors of both the oven and proofing cabinet are illuminated with dual halogen lamps to improve visibility.
